The Tomahawk of Short Ribs – Short Rib Royale is an impressive craft cut we re proud to offer. Our in-house expert butchers at The Meatery start with a whole grassfed beef short rib, then carefully peel the meat back, tie it neatly, and french the bone for a stunning presentation.
Short ribs feature the rich marbling of rib steaks with the deep beefy flavor of chuck roast. They are best cooked low and slow (we like braising or smoking them) and can take on so many different flavor profiles.
